There is no data on the weather forecast on your dates. But according to data of the last years, the temperture of that period was around 20 degree centigrade.

My trip will involve staying in China (Chongqing) for a few days, then a few days in Hong Kong, and then another few days back in China (Xiamen). Will I need to get a multiple-entry visa since I am stopping over Hong Kong and entering China again, or will a single-entry visa for the Chongqing trip be valid for the Xiamen trip as well, even though I have Hong Kong in between?

Hello. Passport holders of many countries don't need a visa to enter Hong Kong. But if you ever leave mainland China to Hong Kong, you are considered to have left the country. If you want to re-enter mainland China, you need another visa. So please apply for double-entry visa for entering Chongqing and Xiamen respectively.

Can I get a mini-tour from Yichang to Shennong stream and how far is it (by bus or how would I get there?) The cruise I booked from Chongqing to Yichang does not stop at Shennong stream. Bummer! Perhaps I am just out of luck??

It will take 3 days by boat to Shennong stream. Since Shennong stream is almost the same as Lesser Three Gorges, so some of the ships go to Shennong stream, some of them go to Lesser Three Gorges, if you'll go Lesser Three Gorges, I don't recommend Shennong stream to you.

Hello. Do you mean how to get to Kunming from Chongqing?
You can get to Kunming by flight, which takes no more than one and a half hours. Every day there are more than 10 flights, very convenient. You can search and book tickets at http://www.chinahighlights.com/china-flights/
You can also take train, but it takes about 20 hours, in addition, it is now the summer holiday, it is not very easy to obtain train tickets.
Because the two cities are too far from each other, I'm afraid that buses are not available. So I suggest you take a flight.

We wish to make our own transfer arrangements from our Chongqing Hotel (Yuzhong). Will this be difficult? also from Yichang to railway station, will that be easy? or should we organise it beforehand?
also can we have an evening meal on board the first night (it departs 9pm) and do we pay for this meal? thankyou for your help

It is not difficult for you to make your own transfer arrangements, you can take a taxi from your hotel in Chongqing to the pier, usually tourists board at Chaotianmen pier. It is also not hard for you to take a taxi from Yichang pier to railway station, you can show this note to the taxi driver in Yichang, and he/she will take you to the railway station :请带我们去宜昌火车站. This means :Please take us to the Yichang railway station.
Usually there is no dinner supplied during the first night of your cruise, I would like suggest you have your dinner first and then on board the ship.
